10 MINUTE SZECHUAN CHICKEN
Yield: 4 Servings


4 Chicken breasts* -- skinned
: an
3 TB Cornstarch
1 TB Vegetable oil
3 Cloves garlic -- minced
5 TB Soy sauce (low salt)
1 1/2 TB White-wine vinegar
1 ts Sugar
1/4 c Water
6 Green onions -- cut into 1"
: pi
1/8 ts Cayenne or to taste

Cut chicken *(these are 1/2 breasts, as you buy them in the market)
into 1 1/2 inch cubes. Lightly toss with cornstarch in bag to coat.
Heat oil in skillet or wok; stir-fry chicken and garlic until lightly
browned. Add soy sauce, vinegar, sugar and water. Cover and cook 3
minutes or until chicken is cooked through. Add green onions and
cayenne; cook uncovered about 2 minutes longer.

10-MINUTE GERMAN SWEET CHOC. CREAM PIE
Yield: 1 Servings

4 oz Package German sweet
Chocolate,
1/3 c Milk,
2 tb Sugar,
3 oz Package cream cheese,
Softened,
3 1/2 c Whipped topping, thawed
1 8-inch graham cracker pie
Crust.

Originally from: "Austin American-Stateman, May 24, 1990 Heat
chocolate and 2 TBSP of the milk in saucepan in saucepan over low
heat, stirring until chocolate is melted. Beat sugar into cream
cheese; add remaining milk and chocolate mixture and beat until
smooth. Fold in whipped topping, blending until smooth. Spoon into
crust. Freeze until firm, about 4 hours. Garnish with chocolate
curls, if desired.

14-MINUTE MAPLE CANDY
Yield: 6 Servings

4 c Maple sirup
1 c Cream
1/4 c Butter
1 c Nut meats, chopped
1 ts Lemon extract

Cook the maple sirup, cream, and butter for 9 minutes after the
boiling point is reached. Remove from heat, add the nut meats and
extract and stir for 5 minutes. Pour into buttered pans and when
cool, cut into squares.

15 MINUTE CHICKEN A LA KING
Yield: 1 Servings

1 pk Swiss mushroom soup mix
1 pk Instant chicken gravy
2 1/2 c Water
1 c Milk
3 c Cooked, diced chicken
1 (2 oz.) jar pimento, sliced
4 oz Mushrooms, sliced and
Sauteed
Sherry or white wine
(optional)

Mix soup mix with water; heat to boiling, stirring constantly. Let
simmer, covered, for several minutes. Bring back to boiling. Add
gravy mix and milk. Stir to blend. Cook several minutes. Add chicken,
pimento, mushrooms, and sherry or wine if desired. Taste before
seasoning with salt and pepper. To serve: Heat thoroughly and serve
over rice. For added flavor and color, add 2 tablespoons chopped
parsley to the rice. Serves 4 to 6. Can be made ahead. Freezes well.
