QUICK & EASY CHEESE OR CHICKEN ENCHILADAS
Yield: 6 Servings


1 large can La Victoria Enchilada sauce 1 Pkg corn or small flour
tortillas Chicken breast, cut in small pieces Jack cheese, grated
Cheddar cheese, grated

Spray a 9" x 13" baking dish with Pam. Place small amount of sauce in
pan. Heat corn tortillas in microwave to soften. Fill tortillas with
chicken, cheese or both. Fold over and place in pan, seam side down.
Cover with remaining sauce and sprinkle with cheese(s). Bake for 45
minutes at 350?.

QUICK & EASY TARRAGON CHICKEN
Yield: 4 Servings

2 tb Butter or margarine
1 tb Vegetable oil
4 Chicken breasts halves
-skinned and boned
3/4 c Dry white wine or vermouth
2 ts Dijon mustard
1 tb Chopped fresh tarragon
-or 1 tsp dried
1/2 ts Salt
Freshly ground pepper
3/4 c Heavy cream

1. In a large frying pan, melt butter in oil over medium-high heat.
Add chicken breasts and cook, turning once, until lightly browned,
about 4 minutes a side. Remove and set aside.
2. Add wine to the pan. Bring to a boil, scraping up bornwn bits
from bottom of pan with a wooden spoon. Stir in mustard, tarragon,
salt and pepper to taste. whisk in cream and boil until mixture
thickens slightly, about 3 minutes.
3. Return chicken to pan; turn in sauces to coat and simmer 7-1/2
minutes until chicken is tender. remove chicken to a serving platter,
spoon sauce over it.

3 lb Chicken pieces
Whole mushrooms
1/2 c Italian dressing -- divided
1/2 ts Salt
8 sl Tomatoes
1/2 ts Pepper
8 sl Onion rings
2 ts Parmesan cheese grated
8 sl Green pepper

EASY BAKE CHICKEN CASSEROLE
Yield: 6 Servings

1 lb Boneless chicken breast,
-cut into 1" cubes

1 jar any flavor Rag=FA Chicken
-Tonight Cooking Sauce
1 c instant rice,uncooked
-(extra rice can be added for
-thicker consistency)

Preheat oven to 400 degrees F. Place chicken in an 11" x 7" baking
dish. Add sauce, stirring to coat chicken evenly. Cover tightly and
bake 35 to 40 minutes or until chicken is thoroughly cooked. Remove
chicken from oven and immediately add rice to casserole; stir to mix
well. Cover tightly and let stand 5 minutes or until rice is tender.

EASY BAKED CHICKEN
Yield: 4 Servings

4 Chicken breast 1/2's,skinned
1/8 ts Garlic powder
1/8 ts Black pepper
1 cn Cream of broccoli soup
1/2 c Water
4 c Noodles, cooked, no salt

Spray 2-qt. baking dish with food release; arrange chicken, bone
side down, in dish. Sprinkle with garlic powder and pepper. Bake at
375 F. for 30 min.

Combine soup and water, spoon over chicken. Bake 30 min. or until
chicken is no longer pink and juices run clear. Serve with pasta.
