OLIVE GARDEN HEART HEALTHY CHICKEN/PASTA
Yield: 4 Servings

-WALDINE VAN GEFFEN

8 oz Fresh pasta shells -- or
6 oz Dry pasta shells
1 1/4 lb Fresh spinach
1 lb Chicken breast; boned,
Skinned -- grilled, cut1"
4 md Cloves garlic-chopped fine
1 ts Olive oil -- or
-Vegetable spray
1 c Chicken broth
1/2 ts Nutmeg or mace
Salt and pepper
1/2 c Parmesan -- grated

Cook the spinach in the broth until tender. Drain and reserve broth.
Mash out excess liquid. Cook pasta. Preheat a saute pan or heavy
skillet over medium heat, add the oil or vegetable spray and saute
the garlic, stirring constantly, until it is white. Don't allow it to
brown. Add the spinach and nutmeg or mace, salt and pepper. Add the
chicken pieces to the spinach, stir and turn and add a small amount
of the reserved cooking broth. Stir and turn the spinach until it is
hot, adding broth as necessary. Remove pasta and immediately drain.
Add the shells into the spinach mixture and blend well. Serve
immediately with Parmesan.

CHEDDARY ARTICHOKE SNACKS
Yield: 4 Servings

20 sl French bread, toasted
1 Jar (6 oz.) marinated
Artichoke hearts, drained &
Chopped
1/4 c Bottled roasted red peppers
2 tb Sliced green onion
1 pk (10 oz.) CRACKER BARREL
Extra Sharp Natural cheddar
Cheese, thinly sliced

TOP toast slices with artichokes, peppers, onion and cheese. Place on
cookie sheet.

BROIL 2 to 3 minutes or until cheese begins to melt. Garnish with
additional red pepper and green onion. Makes 20.

3 c TEABISK (BISQUIK)
1 ROLL SAUSAGE MEAT
1 lb GRATED CHEDDAR CHEESE
-(ORANGE)
1 SPANISH ONION FINELY CHOPPED
3/4 c MILK

Blend sausage meat and onion (in blender if you wish). Add remaining
ingredients and mix well. (important to have onion finely ground).

Drop from teaspoon onto greased cookie sheet

Bake at 425 (four twenty-five) degrees Fahreneheit 10 ~15 minutes
until browned.

This is a QUICK and DELICIOUS snack especially helpful for this time
of year.

CHEESE SNACKS
Yield: 1 Servings

1 1/2 c Flour
1/4 ts Salt
1/4 ts Cayenne Pepper
1/4 lb Butter
1 c Grated Cheese

Sift the first 3 ingredients together. Work in butter and cheese.
Form into a long roll. Chill and slice. Bake in a 350?F oven for 12
to 15 minutes. May be kept in refrigerator, sliced and baked as
needed.
